How to Make Bacon-Wrapped Asparagus Bundles

Start by washing your asparagus and trimming the ends. I usually snap the asparagus and the ends come right off. For the bundles, I like to use a sharp knife and cut the ends off, so they are all the same length. 

Next, toss the asparagus in olive oil and pepper (you don’t need to add salt.)

Then, wrap the bacon around the stalks so that it slightly overlaps the first end and secures it into place. I wrapped two asparagus per piece of bacon. Continue wrapping, working your way down the stalk until you reach the other end of the bacon.

Arrange the bundles on a baking sheet and bake at 400 degrees F for 25-30 minutes. I put down foil for less mess. Or, instead of a regular baking sheet, use a wire rack on top of a cookie sheet. 

Not only is it a fabulous party appetizer, but this would also make an elegant side dish to serve with steak or fish.
